Asparagus Arugula Pomegranate Salad

This is another delicious combination for a salad that you can make any day of the week. The crunchy fresh asparagus goes well with the arugula that offers a spicy kick. The Pomegranate adds a slightly sweet and sour, yet fruity, berry-like taste to the dish, along with some juicy cherry tomatoes. Rounded up with a simple vinaigrette, and some toasted walnuts for crunch, this type of salad will just make all the flavors and textures sing in your mouth.

The Asparagus, Arugula, and Pomegranates offer some very good health benefits. Both have antioxidants that help fight inflammatory diseases such as cancer and heart disease. The Asparagus also contains the amino acid asparagine, which is a powerful diuretic, which makes it effective in combating UTI. Arugula leaves contain vitamin K, which is important in helping the body absorb Calcium, which is important for bone health. Pomegranates don’t shy away from health benefits as well. It contains Punicalagin, which is an antioxidant that is three times more potent in antioxidant activity than those found in red wine and green tea.

Asparagus Rucula Pomegranate salad

Serves: 2
Cooking Time: 10 mins

Ingredients

  • 4 asparagus spears, cut into diagonal slices, with the hard end snapped off and a thumb length of the sprout from the top of the flower uncut.
  • 2 cups arugula leaves
  • 1/2 cup cherry tomatoes, sliced into halves
  • 1/2 cup roasted walnuts, broken into quarters
  • 2 slices macadamia cheese (goat cheese non-vegans)
  • 1/2 cup pomegranate seeds
  • Vinaigrette:
  • 1 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 tsp honey
  • 1 tbsp soy sauce
  • The juice of 1 lemon
  • Coarse salt to sprinkle

Instructions

Combine all the sauce ingredients in a small bowl and set aside.

Mix the asparagus, arugula leaves, cherry tomatoes, and walnuts in a bowl and mix.

Serve on a salad plate and add a generous sprinkle of red pearl pomegranate seeds on each plate.

Drizzle a tablespoonful of sauce on each salad plate. Sprinkle a bit more coarse salt on top.

Place a slice of macadamia cheese or grilled goat cheese on top of each salad serving. Enjoy!
