Ingredients

  • 17.5 oz / 500 grams fresh ginger
  • 1 cup apple cider vinegar
  • 1 tbsp raw honey
  • A pinch of salt

Instructions

Wash and slice the ginger as thinly as possible with a mandoline.

Place the sliced ginger into a bottle, add honey, and then pour in the vinegar.

Shake the bottle thoroughly to mix the honey and vinegar.

Secure the bottle with a lid and place it near a window, in direct sunlight, for three days.

Then, store it in the refrigerator and use it as a relish with your vegetables.
