Black Rice Urad dal pancake

These black rice pancakes were to experiment with the outcome of the color of the rice mixed with White urad dal ( Black-skinned mung bean). The color of the pancake was sensational. Black rice owes its dark color to a range of naturally occurring compounds called “anthocyanin” present in blackberry, acai, all fruits, and leaves. Anthocyanin is a powerful antioxidant and a source of remarkable agents to diminish the aging of cells, inflammation, enhance eyesight, and enhance numerous cardiovascular health and brain function characteristics, including stabilizing blood sugar.

In China, black rice has a mild nutty taste and is good for the kidney, stomach, and liver. Black rice is a deep black color and usually turns deep purple when cooked. Its dark purple color is primarily due to its anthocyanin content, which is higher by weight than other colored grains but more limited in the number of different anthocyanin species present. Black rice was proclaimed as a ‘superfood’ worldwide. In some parts of India and East Asia, it used to be called chicken rice as regularly fed to chicken. Today it has gone worldwide from chicken feed to superfood.

It’s fascinating for most people who try black rice for the first time. They habitually have heard about white or brown rice and basmati or Jasmine rice. So, I decided to buy some black rice and made one of my favorite desserts for some friends. Instead of cooking the rice, we made pancakes with black rice, which turned out to be different. You can also cook as you would normal rice, only that it will come out slightly sticky, not as loose as most rice, as black rice is more glutenous. I often make them for breakfast or snack time whenever I am mood to eat something different.

There several varieties of rice in Asia, and in China, it’s called emperors rice. This rice got its name because it was reserved for the Chinese Emperor, whose health and longevity it was said to ensure. Sometimes known as forbidden rice, it was grown in secret, and the local people were not allowed to cultivate them, thus called forbidden rice. Black rice Urad dal Pancake

Black rice is loaded with nutrition making it a healthier and gluten-free choice. A simple, comforting breakfast for kids and adults.

Ingredients

  • 1 cup black rice soaked 4 hours
  • 1 cup urad dal soaked 4 hours
  • 1/2 cup coconut oil
  • 1 cup rice syrup
  • 1 tsp salt
  • 2 cups blue berries for filling and garnish

Instructions

Soak urad dal and black beans separately in two blows with water overnight.

Blend the beans until smooth batter the next morning.

Add olive, sesame, or coconut oil mix them up thoroughly.

Place a skillet over medium and use a ladle to scoop the batter and pour over the skillet

Using circular motion from the bottom of the ladle spread batter evenly to make pancakes as wide or small as you like.

For this particular dessert do not spread the batter and only pour half a ladle.

This way the pancakes will be small and fluffy

Use Pineapple puree and blueberries for filling and garnish.

Mix both dal batter and rice batter.

Make pancakes in medium size.

You can garnish each pancake with blueberries and spread rice syrup.

Notes

You can serve pancakes with almond or coconut milk.
