In cuisines over the world, sauces for grilled recipes are unique. This is a western version of BBQ sauce commonly used in Chinese cuisine, a thick, spicy, savory sauce made from fermented beans and spices used for glaze sentient versions that will transform your stir-fries!

When you make a homemade “veganice” version, you control what ingredients you use. It becomes easier to select healthier ingredients such as dark brown sugar or (honey), natural sesame butter, and a fresh fennel bulb to replace garlic in the original recipe.

Store-bought hoisin sauce always contains garlic, which is not sentient, and sometimes starches from wheat, making the sauce non-gluten-free. The umami hoisin sauce flavor comes from fermented beans. The truth is, it’s not easy to acquire the fermented flavor of this sauce when creating it by yourself, and perhaps the reason why most people go for the store-bought version. To acquire the fermented flavor, we use miso.

The most common type of miso is the one made from fermented soybean paste. Three main types of miso have different tastes. What is commonly referred to as miso is red miso or any dark-brown miso paste, such as what we use in this recipe. It is a tad salty with an intense umami flavor. Shiro miso, also known as white miso, has a lighter flavor as it is only fermented for a short time. The third type is yellow miso, fermented for a longer period than white miso but shorter than the dark variety.

Miso has gut health benefits from the fermentation process. It is also rich in protein and essential plant compounds that promote your heart health, lower blood sugar levels, and boost your immunity.

Sun-dried tomatoes are one of the best sources of lycopene, an antioxidant that helps reduce symptoms of chronic diseases such as cancer and age-associated macular degeneration. They are also rich in immune-boosting vitamin C that helps improve your overall health.

Ingredients

  • 1 cup black beans, cooked until soft
  • 1/2 cup sun-dried tomatoes, soaked in sesame oil
  • 3 tbsp toasted sesame oil
  • 2 tbsp dark brown sugar
  • 1 tbsp tahini paste
  • 1 medium stalk of fennel bulb, chopped into pieces
  • 1 tbsp miso paste
  • 1 tbsp rice vinegar
  • 1/3 cup soy sauce (according to taste)
  • 1/2 tsp black pepper
  • 1 dried chili or sambal olek (optional)

Place cooked beans in a mortar and mash into a smooth paste; set aside.

Heat sesame oil in a pot and saute the dried chili, fennel stalk, black pepper, and grated ginger for about 4 minutes.

Transfer the sauteed ingredients along with the rest of the ingredients into a blender and whisk the ingredients into a smooth sauce.

Pour the mixture into a pot and let it boil and continue stirring for 20 to 30 minutes until it gets thick.

When the sauce begins to boil, stir in the mashed beans and cook until the mixture comes to a boil.

Let it cool down and taste it for sweet, sour, salty, and pungent taste. Add in one or more of the three flavors as required to your liking.

Transfer to a bottle and cover the top with roasted sesame oil. Secure with a lid and store in the fridge for a few weeks.

The sauce is perfect for vegetable stir fry. You can also serve it with tofu, bok choy, or spinach.

Notes

This is a sentient version of the Hoisin sauce. which was adapted from Chinese cuisine. Play around with the flavors you like and be creative. You can also add some nori algae for a fishy flavor.
