Most sauces require some kind of oil to acquire a creamy consistency. For this easy and quick sauce my recommendation is pumpkin seed oil, gives it a spectacular taste. My Italian friend brought me a liter of pumpkin oil from his family farm in Austria. After tasting for first time, was blown away by its extraordinarily impeccable taste. Organic Virgin Pumpkin Seed Oil, botanical name Cucurbita pepo, is non-GMO, cold-pressed extracted, unrefined, unroasted, and has a deep olive-green to dark brown-orange color with a nutty pumpkin smell and flavor.

Pumpkin Seed Oil Nutrition has a unique flavor and is very rich in zinc. It also has anti-cancer benefits against prostate cancer in men. There are several types of pumpkins from where pumpkin seed oil is extracted. A slow roasting period and low roasting temperature are maintained to attain a highly antioxidant-rich pumpkin seed oil. However, the temperature must be increased for a richer aromatic and fragrant oil, lowering the antioxidant quality. Extracting requires roasting the seeds, then pressing them to release the oil.

  • Amino acid Cucurbitacin is a bitter-tasting compound found in some members of the Cucurbitaceae family, including pumpkin. It has been shown to have potential anti-inflammatory, anti-cancer, and anti-viral properties.
  • β-tocopherol is a type of vitamin E that is abundant in pumpkin seeds. It has been linked to improved immune function and reduced risk of heart disease and cancer.
  • Squalene is a natural compound found in various foods, including pumpkin seeds. It has been shown to have antioxidant, anti-inflammatory, and anti-cancer properties.

Traditionally, the seeds have been used to expel intestinal worms and eliminate tapeworms and diuretics. However, one of the most frequent uses, both traditional and modern, is for benign prostatic hyperplasia (BPH). 

This sweet and creamy sauce is endowed with vitamins, protein, healthy fats, and minerals. It goes very well with pasta and can be drizzled on steamed veggies, salads, or dip. Combine all the components and blend.

Pumpkin seeds also contain fatty acids, sterols, tocopherol, carotenoids, selenium, and magnesium salts, amino acid such as cucurbitacin, phytosterols, β-tocopherol, and squalene. Celery, apple, lemon, cashews, and coriander provide vitamins, protein, healthy fats, and minerals that help boost your immunity, digestive function, heart health, and brain health.

Ingredients

  • 1 celery stick
  • 1 apple, with skin
  • 1 tsp salt
  • 1 lemon, juiced
  • 1/4 cup pumpkin seed oil (or any other oil of choice)
  • 1 bunch of fresh coriander
  • 1 cup cashew nut, soaked in water for 2 hours

Instructions

Combine all ingredients in a blender.

Blend on high speed until very smooth.

Use it as a dip or salad dressing. It is also perfect when served over pasta, steamed vegetables, etc.
