Baba de Camelo

A healthy almond and coconut milk mussy dessert substitution made with the traditional Portuguese condensed milk, almonds, and egg dessert. 

At a colleague’s wedding reception of a mutual friend, Amalina, a fellow chef invited me to photograph the food preparation for the elaborate wedding with approximately 250-300 guests. During a dull moment at the wedding just before lunch, I went over to photograph the delicious assortments of food decorated and displayed an array of “vegetarianiced” local and traditional delicacies.

As my lens glided over a beautifully decorated food, for a moment my graze froze, looking through the camera lens upon a glass of dessert, I snapped several shots. I thought it was an interesting dessert by looking at the snapshot frame on the screen of the camera. I curiously asked the chef what the name of the dessert was. Our Chef explained that the bridegroom had obliged her for a specific dessert he craved for a long while and requested to prepare s traditional dessert called Baba do Camello for him.

As it was dull after the ceremony, I went over to the bridegroom and teasingly mentioned that a partial ” Baba de Camelo” had appeared in the vicinity of the kitchen area with his name on it.  Smilingly he dashed over to the kitchen and after tasting the dessert, his face lit up. He was pleasantly impressed and gave his nod with a broad smile and pleasurable approval to the chef. It was one happy camper with a glass of Baba do Camelo. 

Despite the fact that Portugal is famed for its egg-based conventual sweets, Baba de Camelo is not one of them. Nobody knows where this recipe came from, however, the most frequently acknowledged version is as follows:

Valentina, a lady, had several visitors over late one night. She improvised a dessert using condensed milk and eggs because she didn’t have much food at home but wanted to satisfy her guests.

Fearing there wouldn’t be enough of her dish to go around, she decided to name it Baba de Camelo because she was afraid there wouldn’t be enough of her food to go around, she chose to call it Baba de Camelo (because of its color and texture) to discourage some of the visitors from eating it.

It worked, and those who dared to try it were pleasantly delighted. Always remember that fortune favors the brave! Now go ahead and try this recipe.

Baba de Camelo

Serves: 5-6

A traditional Portuguese dessert made from almonds, rice syrup, and lemon juice is the perfect go-to recipe to make at parties.

Ingredients

  • 1 cup almonds roasted and blended
  • 1/2 cup rice syrup
  • 2 tbsp Lemon juice
  • 1 tsp pure vanilla essence
  • Few sticks of cinnamon for garnish
  • Some blackberry and raspberry for garnishing

Instructions

Set the berries aside for garnish.

Blend everything into smooth paste and chill.

Then you can serve it in a bowl or a beautiful glass.
