  • Ingredients for pizza
  • 1 tbsp full Gingko Biloba pesto
  • 2 tbsp dried oregano
  • 5 cups rocket leaves (arugula)
  • 1/2 cup black olives
  • 1/2 cup capers
  • 1 teaspoon extra-virgin olive oil
  • 12 spiced grilled tomatoes
  • 2 cups zucchini, thinly sliced
  • 2 cups broccoli flowerets
  • Vegan cheese:
  • 2 cups water
  • 1 cup gram flour
  • 1/2 tapioca or rice starch
  • 1 tbsp Kal namak (black salt)
  • 2 tbsp brewers yeast
  • Some salt to taste
  • 1 cup coconut milk

How to make vegan cheese

Pour 2 cups of water into a medium pot and whisk in the gram flour, tapioca starch, black salt, and brewers yeast until the yeast is completely dissolved and there are no lumps.

Place the pot over medium heat and add a little more water if needed.

Add in the coconut milk and cook the mixture, whisking continuously, until the mixture forms a thick paste.

Transfer the paste onto a sheet vegetable paper, spread it evenly and allow it to cool. Place it in the fridge for at least an hour to chill until firm.

Slice up a piece of vegan gram cheese, sprinkle on urad dal pizza dough, and garnish with vegetable ingredients.

Pre-heat the oven to 180 -200˚c

Place the pizza base onto a flat surface, select the toppings, and add vegan cheese.

Transfer to the oven and cook for about 10 -15 minutes (depending on how well cooked you want your veggies) or until vegan cheese melts and enjoy. If you like well-cooked vegetables, let the pizza sit for a few more minutes.

Another way is if you need an oven. You can also place the base in a skillet, add all ingredients, and place over medium heat, cover the skillet for a few minutes, and voila! You have your pan-baked pizza ready.

Gently slide it off the skillet onto a plate and enjoy.
