Crispy Spelt Puff

Try this crispy spelt puff, which some people find easier to stomach than regular wheat flour. This crips crunchy nutty bar is made with spelt puff, with a tasty mixture of roasted nuts and seeds. You may like to add a touch of dried black currents; and gooseberries to give it a little sour and sweet taste making this snack an exceptional crispy bar.  You will make a large block approximately 2cm thick  50 cm in length by 40 cm in width block. Once the crunchy bar is done you can cut them up in long bite-size bars. This recipe is really easy to prepare and super tasty you will ENJOY!

Crispy Spelt Puff

A wonderful crispy snack for all the kids and you for the road. Serve it at parties and everyone will love our Crispy Spelt Puff.

Ingredients

  • 600 gm puffed spelt
  • 200 gm roasted rice syrup
  • 200 gm roasted cashew nuts
  • 200 gm roasted almonds nuts
  • 200 gm roasted sesame seeds
  • 200 gm roasted pumpkin seeds
  • 200 gm roasted sunflower seeds

Instructions

In a large heavy-based deep open pan over medium heat, roast the seeds and nuts individually and set them aside.

To not burn the ingredients, reduce the heat to low, add the Spelt puff and start warming them by constantly stirring it in the pan.

Check that puffs are crunchy, next add the toasted seeds, nuts one by one, and continue stirring until all ingredients are consistently hot.

Bring the heat to very low and gently stir in the rice syrup until you get all the ingredients clumpy and remove from heat.

Lay a sheet of vegetable or parchment paper onto the tabletop. Transfer all the mixture from the pan onto the sheet of paper.

Place another sheet of paper over the mixture and press the pile down to make a sizeable flat bar.

Form a compact block of 2cm high by rolling it out with a rolling pin or use your palms and push the puff mixture into a rectangular form.

Compact the edges as much as possible to keep a regular rectangular shape to prevent cut-offs.

Once you have the shape formed to your satisfaction, allow the crunchy bar to set and cool for 20 to 30 minutes.

Once it's cooled sufficiently, check that the compact rectangle is firm, You may slice it to the size you prefer.

Store them in a glass jar with an airtight cap.

These will probably not last very long on the shelve depending on the cookie thieves you have at home.

Notes

I have added some nuts to give it the extra crunch. You may choose from the wide variety available or try with the common nuts of your choice. Make this puff with a few simple elements like puffed Spelt, roasting sunflower, pumpkin, sesame seeds, almonds, cashew nuts, rice syrup in a warm, deep open pan, and transform the ingredients sweet, rich nutty, crispy cracker bar
