Ribbon ZucchiniPrint Recipe
- 2 large Zucchini
- 1 carrot to garnish
- 1/2 cup pine nuts
- 1 tbsp pumpkin seeds toasted
- 1 tbsp sunflower toasted
- 1/ 2 lemon juice
- 1 tbsp Nutritional yeast
- 1 tbsp black Himalayan salt ( Kala Namak)
Using a vegetable peeler create the zucchini ribbons.
Toss it up with balsamic vinegar, soya sauce, honey and strips of carrots, zucchini ribbons, salt and pepper, olive oil and lemon juice together in a large bowl.
Once coated arrange them on a serving platter.
Top up zucchini ribbons with Rawmesan cheese powder, mint and pine nuts. Serve immediately.
This is a no-cook salad, It's refreshing and lovely way to use up lots of zucchini and impress your dinner guests.
