Buckwheat and Tapioca Based Pizza

Buckwheat Tapioca Pizza

  • *Exotic Sauce for pizza*
  • 840 gm tomato pulp (bottle)
  • 1/2 tsp powder of cumin, cinnamon, ginger, turmeric (optional)
  • 4 tbsp coconut sugar
  • 4 tbsp olive oil
  • 6 sprigs of basil leaves
  • 1 tbsp dried oregano leaves
  • 1 tbsp salsa leaves
  • 300 gm of broccoli flowerets
  • 2 medium tomatoes cut into small cubes
  • 1 small eggplant, brinjals or aubergine cut into small cubes
  • 1 tsp salt

  • 500 gm buckwheat flour
  • 100 gm Tapioca starch
  • 4 tbsp coconut oil or butter
  • 1 tbsp Bicarbonate soda powder
  • 1 tbsp salt
  • *Ingredients base for Pizza cooked Tapioca root gluten-free.*
  • 100 gm boiled tapioca root
  • 4 tbsp coconut oil or butter
  • 1 tbsp salt



*How to prepare the exotic sauce*


In a medium pot, place olive oil and all spices and saute for 2 mins.


Add tomato pulp and the rest of the ingredients.


Allow cooking for 30 minutes over medium heat.


Then, set aside the sauce.

Mix all ingredients, knead the dough for 20 minutes and set aside for 3 hours.


Split the dough into two portions and spread it with your palm of your hand. Then roll out into the size to fit two round trays.


On the tray, spread with oil and dusted with flour.


Prebake bake the Pizza dough for 20min at 200°c.


Remove from oven, spread the sauce over the semi baked dough, and place it into the oven again for 40 minutes.


Add your favourite vegan cheese over the sauce and bake again.

Skin the root and boil until soft or cooked.


Mash into a smooth paste (like mash potatoes). Add salt and olive or coconut oil to taste.


Oil a pizza tray and spread some buckwheat flour to prevent sticking.


Spread the mashed tapioca over the tray and pre-cook for 30 mins at 200°c


Once the tapioca-based firm, spread the tomato paste with ingredients over the base for pizza, top it with fresh sliced tomatoes, you can use any vegan cheese, and bake for 30 mins again for 200°c.


When the pizza is done, garnish with basil leaves and spread a thin layer of olive oil.
