Okra is one of the most versatile vegetables. It can be boiled, grilled, roasted, or sauteed. This sauteed okra recipe with cinnamon and soy sauce is a simple, quick-to-make starter that allows the natural, earthy okra flavor to shine through. The quick sauté method – without any added liquid – gives a crisp, tender texture to the okra and prevents it from getting slimy.
Okra is also remarkably good for your health. Okra pods and seeds contain various antioxidant compounds like phenolics and flavonoid derivatives like catechins and quercetin.
- 1 lb (500gms) Okra, ends removed and thinly sliced
- 1/2 tsp cinnamon powder
- 1 tbsp roasted sesame oil
- 1 tbsp Kikkoman soya sauce
- 1 tbsp coconut cream or (yogurt for non-vegan)
- For Okra Jingle Special, with nuts and berries
- 2 tsp Pine nuts
- 1 tbsp raisins
- 1 tbsp goji berries
- 1 tbsp sunflower seeds
- 1 tsp pumpkin seeds
- 1 tbsp sesame seeds
- 1 tbsp peanut nuts
- 1 tsp caraway seeds
Heat sesame oil in a skillet over low/medium heat.
Add okra and sauté for 4 to 5 minutes, till tender but not fully cooked
Add soya sauce, season with cinnamon powder, and mix well.
Once cooked, transfer okra onto a serving dish.
Top off with coconut cream (or yogurt) and serve.
For Okra Jingle Special with Nuts and Berries:
Sauté okra as above to keep it semi-raw.
Then in another skillet, add sesame oil and saute the nuts for 1 to 2 minutes, or till they're lightly toasted.
Add the goji berries, raisins, and soya sauce, and mix well.
Add sliced sauteed okra. Mix and cook for few seconds.
Once done, transfer onto a serving dish, and serve hot.
