Figs Roast is a delightful, nutrient-rich small sweet treat perfect for satisfying your dessert cravings.

Ingredients

  • 2 stems of rosemary (leaves removed)
  • 12 purple or green figs
  • 1/4 cup balsamic vinegar
  • 1 cup coconut sugar
  • 1/2 cup coconut butter or dairy butter
  • 1/2 cup water
  • Zest from 1 lemon
  • nibs of pistachio nuts or pine nuts for garnish

Instructions

Remove the leaves from the rosemary to obtain the sticks.

Pierce a stick through 3-4 figs and sprinkle them with coconut sugar.

Drizzle balsamic vinegar over the figs and let them marinate.

In a saucepan over medium heat, slowly melt the coconut sugar to form a caramel without stirring vigorously.

Once melted, add the coconut butter (or dairy butter) and stir thoroughly; then incorporate a splash of water.

Pour the caramel generously over the figs and roast in the oven at 190°C for 10 minutes.

Garnish with nibs of pistachio nuts or pine nuts and sprinkle lemon zest over the figs.
