Figgy Cacao Fruit Pie

A supernatural powerhouse dessert. Cacao has 632 different types of antioxidants, all the natural ingredients for physical and mental health. Cacao contains Theobromine which stimulates the secretion of serotonin in our guts and the brain. Mayans and Aztecs knew the potential of these humble cacao beans and used them to trade with gold during their time.

The fig season is brief, but it makes us grateful for what we have. Our region has an excess of riches when it comes to this distinctive fruit, with kinds ranging from delicate white flesh to others with dark pink innards and molasses-like richness. For this pie, look for fresh figs at the farmers’ market, preferably Brown Turkey or Alma kinds.

Check to see if the bottom of the fig’s aperture is entirely closed. If it’s open, there’s a chance a wasp from the pollination process is still within. Keep an eye on the sweetness of the figs you’re using. You may wish to increase the amount of lemon juice if the figs are sweeter, or decrease it if the figs have a milder flavor. The sweet treat made with the richness of figs makes it a nice dessert that you can make on different parties.

Ingredients

  • 100 gm California pitted dates
  • 100 gm roasted walnuts
  • 100 gm roasted cashew
  • 100 gm roasted pecan
  • 100 gm strawberries
  • 100 gm cacao bean
  • 100 gm dried figs
  • 2 tbsp rice syrup or honey
  • Ingredients for topping
  • 2 cup fresh strawberries
  • 1 cup strawberries sliced
  • ½ cup goji berries to blend
  • ½ cup for garnish
  • 2 tbsp. honey
  • 2 tbsp. coconut butter
  • 1 cup soaked cashew nuts
  • 2 large bananas sliced

Instructions

Place all nuts and figs and dates into a chopper with some honey or other sweetener and mix for few minutes and leave it chunky, don't blend until smooth. You will need a spatula to get all the ingredients out as it will get sticky on the sides of the container.

The first layer. Select a clear glass tray and applies a layer of coconut oil; this will prevent the nutty base from sticking to the tray.  Spread nutty base evenly over the round tray place it in the fridge to chill and get firm.

How to make the base

For the first layer, blend strawberry cashew cream add, two cups strawberries, half cup goji berries, honey or sweetener, coconut butter, soaked cashew nuts and set aside.

For your second layer. Slice bananas and squeeze lemon juice over, toss it up in a bowl to coat juice evenly over the bananas. With a spatula spread it evenly over the nut base and lay a layer of sliced strawberries as well.

Pour half or a thin layer of blended strawberry over the second layer of banana and spread it out evenly.

Evenly spread a layer of sliced fresh fruit over the cream. Now pour the remaining cream over the layer of fruit and spread it evenly.

You can garnish the top the way you like it; we made a heart with goji berries and sliced nuts ( red and white)
