Raspberry & Blueberry Tower – A Delightful Breakfast Creation
After a bountiful raspberry harvest at our master unit, I found myself experimenting with various recipes. One of the most delightful results was this Raspberry Tower—a vibrant, playful, and delicious breakfast treat.

The Health Benefits of Raspberries
Raspberries are widely loved for their sweet-tart flavor and incredible health benefits. Native to America and Europe, these berries resemble tiny red tomatoes and are packed with essential nutrients. Known by different names in various countries, raspberries have long been recognized for their health-boosting properties.

For this recipe, I combined raspberries and blueberries, creating what I call the Raspblue Berry Tower—a pancake stack infused with the goodness of two powerful superfoods.

This RaspBlue Berry Tower is a creative twist on breakfast, combining layers of crispy dosas with organic creamy yoghurt and vibrant fruits. The dish features a delicate blended raspberry sauce along with fresh raspberries and blueberries, offering an antioxidant-rich experience that is both playful and nutritious.

Ingredients

  • 1 cup organic creamy yoghurt
  • 1 cup fresh raspberries
  • 1/2 cup fresh blueberries
  • 4 small dosa (rice and white mung bean pancakes)
  • 1 1/2 tablespoon maple syrup or honey

Instructions

Blend a few raspberries with the maple syrup or honey to create a smooth sauce.

Place the first dosa on the plate.

Spread one tablespoon of organic creamy yoghurt over the dosa.

Drizzle one teaspoon of the freshly prepared raspberry sauce over the yoghurt.

Top with three or four whole raspberries and a few fresh blueberries.

Place another dosa on top and repeat the layering process until you have three stacks.

Carefully arrange the fruits to ensure the tower remains stable, as uneven distribution may cause it to collapse.
