Sprouts Cashew Nasturtium combination makes a beautiful salad mix for festive occasions. This entirely raw salad requires simply mixing and tossing the ingredients with salt and a little olive oil or pumpkin seed oil, then garnishing with flowers before serving. I prepared this dish for Terraviva at a friend and colleague’s vegetarian restaurant in Brasilia, and the clients loved the colorful combination of nasturtium.
You can quickly toss this salad in a bowl. Sprouts Cashew Nasturtium makes a delightful party salad with a pleasing appearance and vibrant colors, capable of serving 25–30 persons.
Sprouts Cashew Nasturtium
A vibrant raw salad featuring mung bean sprouts, roasted cashew nuts, black raisins, goji berries, and diced tomatoes, garnished with nasturtium flowers for a festive presentation.
Ingredients
- 500 grams / 17 ounces mung bean sprouts
- 1 cup roasted cashew nuts
- 1 cup black raisins
- 1/2 cup goji berries for garnish
- 2 cups diced tomatoes
- Salt and pepper to taste and dressing oil
Instructions
Place all ingredients loosely into a large bowl, excluding the flowers.
Lightly toss the ingredients and plate them on a beautiful tray.
Garnish with nasturtium flowers and additional nuts on top.
