Coco gram marbles are a high-protein snack free of gluten and lactose that is perfect for vegans as well as anyone looking for a healthy snacking option.

Ingredients

  • 1/2 cup gram flour (available at any Asian store)
  • 1 cup water and mix in a pinch of salt
  • 1/2 cup rice syrup
  • 2 drops of jasmine or rosemary essential oil (optional)
  • 1/2 cup fine desiccated coconut or coconut flakes.

Instructions

1

Sieve the gram flour into a pan to remove any lumps. This will make the flour thin and fine, essential for making nice soft gram balls.

2

Add the water to the pan, and whisk thoroughly until the gram flour is dissolved and there are no lumps. Add the rice syrup, essential oil, and salt.

3

Place the pot over medium heat and cook, stirring continuously until the mixture thickens.

4

Then remove it from heat and allow it to cool and get even thicker.

5

Once completely cool, divide the dough into even quantities and roll it into balls between your palms. You can make 15 to 20 balls depending on the size you prefer. The best is double marble size.

6

Spread the fine desiccated coconut or coconut flakes onto a tray.

7

Roll the gram balls in the coconut until completely covered with grated coconut. Stick a little clove bud over each ball and garnish with physalis, seasonal berries, or a natural jam. It's an easy healthy snack for kids and adults.

Notes

Variation: You can add chocolate or carob powder while preparing the gram flour to have a healthy chocolatey flavor or add any essential oil of your choice.
