Ingredients
- For the crumble topping
- 1/4 cups apple juice or (1 cup mango pulp optional)
- 500 gm / 3 cups gram flour
- 200 gm / 2 cups rice or cornstarch
- 1 tbsp baking powder
- 1 tbsp bicarbonate soda
- 4 tbsp coconut butter
- Zest from one lemon
- Apple filling
- 10 green apples
- 1 tbsp Vanilla essence
- 1 tbsp cinnamon powder
- 250 gm dark brown sugar or demerara sugar
- 2 Pinch of salt
- Juice from one lemon
Instructions
Preheat the oven to 200°C.
To make the crumble, place all the ingredients except the apple juice in a bowl and mix until you have a sandy consistency. To achieve that, you need to gently mix the flour with the tips of your finger instead of mashing like preparing dough for bread.
Slowly add the apple juice a little at a time and mix with your fingers until the mixture is slightly clumpy. The texture should be sandy and chunky rather than smooth, like bread dough. Set aside.
Peel, core, and cut the apples into thin slices and place them in a baking dish.
Add the remaining ingredients for the apple filling and mix in.
Spread the crumble topping generously over the apples.
Bake at 200°c for approximately 45 to 55 minutes, until you can smell the crumble scent in the air and the crust is golden brown and crunchy.
Notes
Instead of crumble topping, you could also make the gram flour dough, roll it out into a sheet, and place it over the apples. Either way, it's a delicious and healthy substitute for white flour. Instead of apple juice, you could use mango pulp.
