These delicious fruity, nutty bars are oil-free and sugar-free, offering a nutty, chewy, and subtly sweet flavor that makes them an ideal grab-and-go snack.

Crisp and chewy in texture, they are packed with a blend of dried fruits and nuts bound together by brown rice syrup and optionally maple syrup. Perfect for a healthy on-the-go breakfast, a terrific addition to lunchboxes, or a delightful treat for picnics and walks, these bars can even be stored in the refrigerator for several weeks.

These homemade fruity nutty bars provide a tasty alternative to store-bought granola bars. You may substitute Medjool dates or raisins for a slightly different flavor profile.

My ultimate go-to snack is the delicious, high-protein, and mouthwatering Fruity Nutty Bar. Try these bars and you'll love them for sure.

Ingredients

  • 1 cup roasted almonds
  • 1 cup roasted cashews
  • 1/2 cup roasted pecans
  • 1/2 cup dried prunes
  • 1/2 cup dates
  • 1/2 cup dried apricots
  • 2/3 cup dried blueberries
  • 2/3 cup goji berries
  • 1/2 cup toasted desiccated coconut
  • 1/2 cup brown rice syrup
  • 1/4 cup maple syrup (optional)
  • 1/2 teaspoon sea salt

Preheat the oven to 180°C/160°C Fan/4.

Line a 20cm (8in) or 23cm (9in) square tin with baking paper.

Spread the desiccated coconut evenly on a baking tray and bake for 5 minutes until it turns slightly brown and releases a sweet, toasty aroma. Set aside to cool. (This optional step enhances flavor and texture.)

Toast the nuts in the oven until they are slightly brown, then remove and let them cool.

In a large bowl, combine the roasted almonds, cashews, and pecans with the toasted desiccated coconut.

Pour in the brown rice syrup and add the sea salt, then mix thoroughly until the ingredients form a chunky consistency.

Gently fold in the dried prunes, dates, and dried apricots to evenly distribute the fruits within the mixture.

Press the mixture into the prepared tin to form a flat bar approximately 1.5 cm (or 1 in) thick and in a square shape.

Evenly press the goji berries, dried blueberries, and a few extra crushed pecans on top to add texture.

Place the tin in the freezer for a few minutes to firm up the bar before cutting.

Cut into desired shapes and individually wrap the bars in cling film or paper to keep them fresh, making them perfect for lunchboxes, picnics, or on-the-go snacking.
