Made with the rich flavors of carob and blueberry, this pancake sauce is a delightful complement to any meal.

Ingredients

  • Sauce:
  • 2 tablespoon agar-agar
  • 1 cup water to melt agar-agar
  • 3 tablespoon carob powder
  • 2 tablespoon ginger juice
  • 1 cup coconut milk
  • 1 cup rice syrup
  • 2 cups blueberries
  • 1 cup blueberries for garnish
  • 1/2 cup coconut sugar
  • Juice of a half lemon

Instructions

For the sauce:

In a medium pot, bring 1 cup water to a boil.

Add the agar-agar and stir until completely dissolved.

In a separate bowl, mix 3 tablespoon carob powder and 2 tablespoon ginger juice with 1/2 cup water until smooth.

Combine the carob mixture with the hot agar-agar solution and stir continuously until the mixture thickens.

Stir in the blueberries.

Plate the pancakes and top them with the carob and berry sauce.

Sprinkle coconut sugar and a few drops of lemon juice before serving.
