Chia seeds pudding an easy-to-make dessert.
These seeds are rich in omega oils and immensely suitable to balance our gut constitution increase energy.
I made this yummy raspberry chia pudding a few times. Once I made it to a yoga teacher training course. I made it for the second time at Quinta (farm hotel) or some students of the UK.
When I made it for the first time it was at the harvest time from our raspberry field. In May and June, these plants bloom and bear fruits. We have almost 3000 berry plants. We often sell a few hundred kilos at farmers’ markets in Portugal in Covilha. The volunteers loved the tart. It is specially made for vegan people that love sweets and go all vegan.
Raspberry Chia pudding
Raspberry Chia Pudding is a delightful, aromatic, and incredibly refreshing dessert. It's like having dessert for breakfast when you have a cup of this beauty in the morning. And you will like it.
Ingredients
- 1/2 cup Chia seeds
- 1-liter almond milk or coconut milk
- 1 cup rice syrup or agave
- For topping wild berries of your choice
- Rice syrup
- 2 tbsp of water
- 1 tbsp kuzu powder to thicken
Instructions
Soak chia seeds in the almond milk mixed with syrup.
Place the mixture for an hour in the refrigerator to get firm.
Mix the Kuzu in water in a small pot and allow to boil until the mixture turns thick and transparent
Add the wild fruits of choice to Kuzu and mix fruits to have a chunky consistency.
Remove the Chia from the refrigerator and place it into a cup or bowl to serve.
Add the fruit blend topping with a slice of strawberry or raspberry.
