Chocolate Pudding Tart is an indulgent, no-bake dessert featuring a rich, chocolaty pudding layered over a crunchy nut base. Try it for an unforgettable treat.

Ingredients

  • 0.7 cup chocolate powder
  • 2.0 cups coconut milk
  • 0.7 cup coconut sugar, agave, or rice syrup
  • 0.7 tablespoon agar agar
  • 0.7 tablespoon rice starch plus 0.3 cup water
  • 0.3 cup water to melt agar agar
  • Base:
  • 0.2 cup roasted almonds
  • 0.2 cup raisins
  • 0.2 cup walnuts
  • 0.2 cup roasted cashew nuts
  • 2.7 large Medjool dates, seeded

Instructions

In a bowl, combine the chocolate powder, coconut milk, and sweetener; mix well and set aside.

Roast the almonds, raisins, walnuts, and cashew nuts, then add the dates and blend until a coarse, sandy consistency is achieved.

Press the blended nut mixture firmly into a ring pan to form the base.

In a small pan, bring 0.3 cup water to a boil and add 0.7 tablespoon agar agar, stirring continuously until it completely dissolves.

Mix 0.7 tablespoon rice starch with 0.3 cup cool water, then combine this with the melted agar agar mixture.

Stir the liquid mixture into the chocolate mixture until fully incorporated.
