Ingredients

  • Vegan pizza: be creative. There are few thin layers of veggies:
  • 300 grams Gingko pesto
  • 250 ml spicy Tomato sauce
  • 1 Red bell pepper
  • 1 green bell pepper each
  • 2 zucchini, thinly sliced with a peeler
  • 500 grams Broccoli cut into flowerets
  • 100 grams Arugula Rocket salads
  • 200 grams Black green olives
  • 1/2 cup olive oil
  • Vegan cheese:
  • 1 cup coconut milk
  • 1 cups gram flour
  • 1/2 cup tapioca flour
  • 2 cups water
  • 1 tbsp Kal Namak (black salt)
  • 1 tsp mineral salt or to your taste
  • 2 tbsp brewers yeast
  • 2 tbsp coconut oil

Instructions

Let's begin by making this quick and easy Vegan Cheese. Add 2 cups of water in a medium pot and mix in the gram flour, tapioca flour, black salt, brewers yeast. Then with a whisk mix thoroughly, ensure all flour dissolve and no clumps remain.

Place the pot over medium heat. If the mixture is a bit too dry, add a little more water as needed.

Continuously stir with a whisk. When you see the mixture getting thicker, add coconut milk to the mix, stirring until liquids thicken as a paste.

Transfer the formed cheese into a bowl of 10 to 12 cm wide and 5-7 cm high. You may need two bowls.

Once they are filled, allow the cheese to frim in a cool place. You may like to store the bowl in the refrigerator.

Once cooled, transfer to a vegetable paper to wrap and store, or you may keep in the bowl refrigerated to cool and firm

Slice up a piece of gram flour cheese, place it on the buckwheat pizza dough, and garnish with all the ingredients.

Place pizza into the oven at 190C and cook until vegan cheese melts. Serve hot and enjoy!

Notes

When you place the cheese on the pizza in the oven, the vegan cheese may melt just very slightly like mozzarella but not much. As there is coconut milk, the cheese will have a creamier than firm texture. You can try it without coconut milk or tapioca to get a firmer cheese.
