Basmati rice Chickpea stir fry is a simple recipes for lunch or dinner. It’s nourishing and yummy. Chickpeas will fill you up and has substantial nutrition. Try it ,you will love how easy and fast the process is.
Basmati rice Chickpea stir fry
- 1 cup basmati rice
- 2 cups water to cook basmati rice
- 1 tsp turmeric powder
- 1 tsp salt and some according to taste
- 1 carrot grated
- 1 cup cooked chickpeas
- 2 tbsp clear sesame oil
- 5 sprigs of coriander fresh leaves
- A bowl full of baby kale
Wash basmati rice in cool water.
In a pot, add 2 cups of water, then add 1 cup of basmati rice. Set to cook at medium heat for 20 minutes. Do not cover the pot.
Once cooked, add grated carrots and fold into the rice gently and cover the pot to allow heat from rice to soften the carrot.
In a separate pot, cook the chickpeas, soak chickpeas for 6 hours before cooking.
Saute chickpea in sesame oil for few minutes and add to rice, and gently spread chickpea into rice
Garnish a serving plate with baby kale and coriander leaves.
Spread basmati rice over the leaves, and it is ready to serve.
