Apple is such a versatile fruit that has been cherished for centuries. The adage “An apple a day keeps the doctor away” highlights its timeless appeal, from pickles in India and medicines in Japan to jams and baked desserts in Europe. It is also noted that “apples helped Newton discover gravity,” while ancient Vedic scriptures credit Bhaskaracarya with early insights on gravity.
I love making crumbles with fresh, in-season apples. Their richness in malic acid is excellent for the liver and digestive system. Consuming one apple daily may help lower the risk of diabetes, and thanks to its antioxidants, it also strengthens the immune system and enhances brain health. According to Ayurveda, apple possesses a rechana (laxative) quality, and when eaten first thing in the morning, it aids digestion.
Nutty Raw Apple Dessert
This go-to recipe for apple lovers combines the crisp freshness of green apples with a rich, nutty base and hints of cacao and honey. A delightful and unique dessert that celebrates natural flavors.
Ingredients
- 2 green apples
- 1/2 cup of mixed nuts
- A few dried figs
- 1 tablespoon cacao beans
- 1 tablespoon rice syrup or honey (or melted raw molasses)
- Pinch of salt
Instructions
Made this dessert inside a round mould to test the outcome.
Skinned one green apple and sliced it to create layers inside the mould.
Blended a few nuts and a few dried figs in a mixer until chunky, adding some honey to help them stick together.
Placed the mould on a plate, filled it with the nutty mix, and pressed it down to form a firm base.
Pureed one apple until smooth, then warmed the puree on low heat for a minute to homogenize it. Added a pinch of salt to naturally sweeten the juice with fructose, then set aside.
Layered sliced apple over the nutty base, spreading a little apple puree over it. Repeated with another layer of sliced apple and another layer of puree until the mould was filled.
Sprinkled broken pieces of raw dried cacao beans over the top as a garnish.
Finished by spooning rice syrup over the whole stack, creating an easy and quick emergency dessert.

Notes
Apples serve as a natural tranquilizer for the gut. Warming up the juice of one apple and drinking it can help calm the nervous system in the digestive tract.
