Pumpkin soup is a family favorite for many in homes across Europe and many other places as well. For this pumpkin butter recipe, all you need is a few ingredients, a slow cooker or pot, few bottle containers, and time, 4-6 hours, for slow cooking, and you will impress everyone.

Pumpkin butter is similar to apple, zucchini, or carrot butter, only that it’s made using pumpkins. Fantastic on toast, pancakes, oatmeal, or waffles or mixed into soups or just eaten directly. The natural antimicrobial properties of the spices like cinnamon, cloves, nutmeg, ginger, and cardamom give extra health benefits and elevate the taste of the final butter.

Ingredients

  • 3 3/4 cups pumpkin puree, cooked
  • 1 cup rice syrup or raw honey
  • 2 tbsp organic pumpkin oil
  • 1/2 cup apple cider
  • 1 tsp vanilla pod extract
  • 2 tsp fresh lemon juice
  • 1 drop lemon essence
  • 1 tbsp cinnamon powder
  • 1 tsp fresh ground nutmeg
  • 1 tsp fresh grated ginger
  • 1 tbsp sea salt
  • 1/4 tsp freshly ground cloves powder
  • 1/4 freshly-powdered cardamon
  • 2 drops cardamom essential oil
  • 2 drops cinnamon essential oil

Instructions

Add all of the ingredients except the cloves and cardamon to a slow cooker.

Stir well to combine and cook on very low heat for 4 hours.

Add the cloves and cardamon and continue cooking for another 1 hour or until the sauce is thick.

Stir continuously to prevent sticking or burning.

For a thicker pumpkin butter, remove the lid and continuously stir the mixture until you get desired consistency.

With the spoon, scoop out the pumpkin butter into jars and allow them to cool.

Store the butter in the refrigerator for up to three weeks. It can also store longer in the freezer.
