Gram Flour Creamy Pudding

You’ll adore this “Pudding Halwa” made of besan (chickpea flour). Known as “Besan Ka Halwa”, it is a wonderful Indian Asian delicacy that is quick and easy to make.

Chickpea flour, often known as gram flour or besan, is readily available in Indian and Asian markets. The flour is made from crushed, dried chickpeas. I regularly use this flour as a substitute for white flour in my sweets. It can be packed and kept in the refrigerator for up to 6 months.

Gram Flour Creamy Pudding has a slightly gelatinous texture. It’s easy to make, which makes it perfect when you have unexpected visitors or if you have a sweet tooth but don’t want to put in too much effort.

A cardamom-flavored Asian pudding made with chickpea flour and coconut sugar. This creamy pudding is easy to prepare and offers a deliciously sweet, caramel-like flavor.

Ingredients

  • 1.6 cups gram flour
  • 3.2 cups water
  • 1.6 cups rice syrup
  • 0.8 cups dried prunes
  • 0.8 cups coconut sugar
  • 2 pods of crushed cardamom (rounded from 1.6)
  • Mint leaves for garnish

Instructions

In a medium pot, combine water, coconut sugar, crushed cardamom, and gram flour. Stir until a smooth liquid forms.

Place the pot over medium heat and cook the mixture, stirring continuously until it begins to thicken.

Incorporate rice syrup and continue stirring until the mixture reaches a custard-like, pudding consistency.

Pour the pudding into serving cups and drizzle a thin layer of rice syrup over them.

Garnish with mint leaves and dried prunes, then allow the pudding to cool before serving.
