Basmati Rice Chickpea Stir Fry
Ingredients
- 1 cup basmati rice
- 2 cups water to cook basmati rice
- 1 teaspoon turmeric powder
- 1 teaspoon salt (adjustable to taste)
- 1 carrot, grated
- 1 cup cooked chickpeas
- 2 tablespoons clear sesame oil
- 5 sprigs fresh coriander leaves
- A bowl full of baby kale
Instructions
Wash the basmati rice in cool water.
In a pot, add 2 cups of water and 1 cup of basmati rice; cook at medium heat for 20 minutes without covering the pot.
Once cooked, add the grated carrot to the rice, fold gently, and cover the pot to allow the rice's residual heat to soften the carrot.
Soak the chickpeas for 6 hours. Then, in a separate pot, cook the chickpeas.
Sauté the cooked chickpeas in 2 tablespoons clear sesame oil for a few minutes, then gently fold them into the rice.
Garnish the serving plate with a bowl full of baby kale and 5 sprigs of fresh coriander leaves.
Spread the rice over the garnished leaves and serve.
