- 0.17 cup apple juice or (0.67 cup mango pulp optional)
- 333.3 grams gram flour (approx. 2.0 cups)
- 133.3 grams rice starch or cornstarch (approx. 1.33 cups)
- 0.67 tablespoon baking powder
- 0.67 tablespoon bicarbonate soda
- 2.67 tablespoon coconut butter
- Zest from 1 lemon
- Apple filling:
- 7 green apples
- 0.67 tablespoon Vanilla essence
- 0.67 tablespoon cinnamon powder
- 166.7 grams dark brown sugar or demerara sugar
- 1 pinch of salt
- Juice from approximately 2/3 of a lemon
Instructions
Preheat the oven to 200°C.
Place all the crumble topping ingredients (gram flour, rice starch or cornstarch, baking powder, bicarbonate soda, coconut butter, and lemon zest) in a bowl and gently mix with your fingertips until a sandy consistency forms.
Slowly add the apple juice (or mango pulp, if using) a little at a time, mixing until the mixture becomes slightly clumpy while retaining a sandy, chunky texture.
Peel, core, and thinly slice the apples, then arrange them in a baking dish.
Add the apple filling ingredients (green apples, Vanilla essence, cinnamon powder, dark brown sugar or demerara sugar, salt, and lemon juice) to the apples and mix well.
Spread the prepared crumble topping generously over the apples.
Bake at 200°C for approximately 45 to 55 minutes until the aroma of the crumble fills the air and the crust is golden brown and crunchy.
